Ingredients:

  • 4 boneless skinless chicken breasts, 6-8 oz each
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp unsalted butter
  • 1/4 cup chicken broth
  • 1 tsp lemon juice

Instructions:

  1. Preheat your oven to 425°F (218°C). Pat the boneless skinless chicken breast pieces completely dry with paper towels.
  2. Rub each chicken breast with olive oil, then coat evenly with the sea salt, black pepper, garlic powder, and paprika.
  3. Place chicken in a baking dish or sheet pan lined with parchment paper and bake for 20–25 minutes.
  4. Use a meat thermometer to check the thickest part of the breast; remove from the oven when the internal temperature reaches 160°F (71°C).
  5. Transfer the chicken to a plate and tent loosely with foil. Let rest for 5–10 minutes until the internal temperature rises to 165°F (74°C).
  6. Optional: For the pan sauce, whisk butter, chicken broth, and lemon juice into the hot baking pan over medium heat for 2 minutes to scrape up the brown bits.
