Ingredients:
- 1 tsp Kosher salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried oregano
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp extra virgin olive oil
Instructions:
- Pat the chicken breasts completely dry with paper towels. Use a meat mallet to pound the thickest part of the breast until the entire piece is an even thickness of about 3/4 inch.
- Rub the olive oil over the meat, then coat generously with the seasoning blend (salt, pepper, paprika, garlic powder, onion powder, and oregano), pressing it in with your fingers.
- Preheat the oven to 400°F (200°C). Heat an oven-safe skillet over medium-high heat until the oil shimmers.
- Place the chicken in the pan and sear for 3-4 minutes per side without moving them, until a mahogany-colored crust forms.
- Transfer the skillet into the oven and bake for 8-12 minutes. Remove when the internal temperature of the thickest part reaches 160°F (71°C).
- Transfer the chicken to a plate and tent loosely with foil. Let rest for 5 minutes until the internal temperature rises to 165°F (74°C).
