Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 2 cups (480ml) unsweetened almond milk
- 1 cup (245g) plain Greek yogurt
- 1/4 cup (40g) chia seeds
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) fine sea salt
- 2 cups (300g) mixed berries
- 1 tsp (5ml) lemon juice
Instructions:
- In a large mixing bowl, whisk together the rolled oats, chia seeds, and sea salt.
- Stir in the almond milk, Greek yogurt, maple syrup, and vanilla extract. Whisk vigorously until the chia seeds are evenly distributed and no clumps of yogurt remain.
- Toss the mixed berries with lemon juice in a separate small bowl.
- Either stir half the berries directly into the oat mixture or layer the berries at the bottom and top of the jars.
- Divide the oat mixture evenly among four 16 oz Mason jars, seal tightly, and refrigerate for at least 6 hours.
