Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 2 cups (480ml) unsweetened almond milk
  • 1 cup (245g) plain Greek yogurt
  • 1/4 cup (40g) chia seeds
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 2 cups (300g) mixed berries
  • 1 tsp (5ml) lemon juice

Instructions:

  1. In a large mixing bowl, whisk together the rolled oats, chia seeds, and sea salt.
  2. Stir in the almond milk, Greek yogurt, maple syrup, and vanilla extract. Whisk vigorously until the chia seeds are evenly distributed and no clumps of yogurt remain.
  3. Toss the mixed berries with lemon juice in a separate small bowl.
  4. Either stir half the berries directly into the oat mixture or layer the berries at the bottom and top of the jars.
  5. Divide the oat mixture evenly among four 16 oz Mason jars, seal tightly, and refrigerate for at least 6 hours.
