Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5g) ground cinnamon
  • 2 tbsp (16g) cornstarch
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 1 tbsp (12g) granulated sugar
  • 1/2 tsp (2g) ground cinnamon

Instructions:

  1. In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, cornstarch, and salt. Stir gently until the peaches are evenly coated.
  2. Pour the melted butter directly into the bottom of a 9x13 inch baking dish and gently tilt the pan to coat the bottom.
  3. Pour the peach mixture into the baking dish over the melted butter, spreading them into an even layer.
  4. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Stir in the milk until just combined.
  5. Pour the batter over the peaches and melted butter without stirring to allow the layers to form naturally.
  6. Sprinkle the final cinnamon-sugar mixture evenly across the top of the batter.
  7. Bake at 350°F (175°C) for 40–45 minutes until the topping is golden brown.
