Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) ground cinnamon
- 2 tbsp (16g) cornstarch
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 1 tbsp (12g) granulated sugar
- 1/2 tsp (2g) ground cinnamon
Instructions:
- In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, cornstarch, and salt. Stir gently until the peaches are evenly coated.
- Pour the melted butter directly into the bottom of a 9x13 inch baking dish and gently tilt the pan to coat the bottom.
- Pour the peach mixture into the baking dish over the melted butter, spreading them into an even layer.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt. Stir in the milk until just combined.
- Pour the batter over the peaches and melted butter without stirring to allow the layers to form naturally.
- Sprinkle the final cinnamon-sugar mixture evenly across the top of the batter.
- Bake at 350°F (175°C) for 40–45 minutes until the topping is golden brown.
