Ingredients:
- 3 lb beef chuck roast
- 2 tbsp neutral oil
- 3 cups low-sodium beef broth
- 0.5 cup dry red wine
- 2 tbsp Worcestershire sauce
- 1 pkt onion soup mix
- 4 cloves garlic, smashed
- 2 sprigs fresh thyme
- 1 tsp black pepper
- 6 French hoagie rolls
- 12 slices provolone cheese
- 2 large onions, thinly sliced
- 2 tbsp butter
Instructions:
- Pat the beef roast dry with paper towels. Note: Moisture is the enemy of a good sear; dry meat browns, wet meat steams.
- Heat oil in a large cast iron skillet over medium high heat. Sear the roast for 5–7 minutes per side until a deep brown crust forms.
- Transfer the seared beef to the slow cooker. Deglaze the skillet with a splash of beef broth, scraping up the browned bits, and pour into the slow cooker.
- Add the remaining beef broth, red wine, Worcestershire sauce, onion soup mix, smashed garlic, thyme, and black pepper to the slow cooker.
- Cover and cook on Low for 8 hours (or High for 4 hours) until the beef is fork tender and shreds easily.
- While the beef cooks, sauté the sliced onions in butter over medium heat until caramelized and golden brown. Set aside.
- Remove the beef from the pot and shred with two forks, removing any excess fat.
- Strain the cooking liquid through a fine mesh strainer into ramekins to serve as au jus.
- Split the hoagie rolls and toast lightly. Place two slices of provolone on each roll and melt under a broiler until bubbly and slightly browned.
- Pile the shredded beef and caramelized onions onto the rolls and serve with the au jus.
