Ingredients:

  • 3 lb beef chuck roast
  • 2 tbsp neutral oil
  • 3 cups low-sodium beef broth
  • 0.5 cup dry red wine
  • 2 tbsp Worcestershire sauce
  • 1 pkt onion soup mix
  • 4 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • 1 tsp black pepper
  • 6 French hoagie rolls
  • 12 slices provolone cheese
  • 2 large onions, thinly sliced
  • 2 tbsp butter

Instructions:

  1. Pat the beef roast dry with paper towels. Note: Moisture is the enemy of a good sear; dry meat browns, wet meat steams.
  2. Heat oil in a large cast iron skillet over medium high heat. Sear the roast for 5–7 minutes per side until a deep brown crust forms.
  3. Transfer the seared beef to the slow cooker. Deglaze the skillet with a splash of beef broth, scraping up the browned bits, and pour into the slow cooker.
  4. Add the remaining beef broth, red wine, Worcestershire sauce, onion soup mix, smashed garlic, thyme, and black pepper to the slow cooker.
  5. Cover and cook on Low for 8 hours (or High for 4 hours) until the beef is fork tender and shreds easily.
  6. While the beef cooks, sauté the sliced onions in butter over medium heat until caramelized and golden brown. Set aside.
  7. Remove the beef from the pot and shred with two forks, removing any excess fat.
  8. Strain the cooking liquid through a fine mesh strainer into ramekins to serve as au jus.
  9. Split the hoagie rolls and toast lightly. Place two slices of provolone on each roll and melt under a broiler until bubbly and slightly browned.
  10. Pile the shredded beef and caramelized onions onto the rolls and serve with the au jus.
