Ingredients:
- 1 lb fresh green beans, trimmed and thoroughly dried
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/4 cup grated Parmesan cheese
Instructions:
- Place a 12-inch cast iron skillet or heavy-bottomed stainless steel pan over medium-high heat. Add the olive oil and unsalted butter.
- Once the butter stops foaming and begins to smell nutty, add the green beans in a single layer. Let them sit undisturbed for 2-3 minutes until they develop blistered, brown spots.
- Reduce heat to medium. Add the minced garlic, salt, and pepper. Sauté for 1-2 minutes until the garlic is fragrant and translucent, but not brown.
- Remove the pan from the heat entirely. Immediately sprinkle the grated Parmesan cheese over the beans and toss rapidly with tongs until the cheese melts into a velvety coating.
