Ingredients:

  • 1 lb fresh green beans, trimmed and thoroughly dried
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Place a 12-inch cast iron skillet or heavy-bottomed stainless steel pan over medium-high heat. Add the olive oil and unsalted butter.
  2. Once the butter stops foaming and begins to smell nutty, add the green beans in a single layer. Let them sit undisturbed for 2-3 minutes until they develop blistered, brown spots.
  3. Reduce heat to medium. Add the minced garlic, salt, and pepper. Sauté for 1-2 minutes until the garlic is fragrant and translucent, but not brown.
  4. Remove the pan from the heat entirely. Immediately sprinkle the grated Parmesan cheese over the beans and toss rapidly with tongs until the cheese melts into a velvety coating.
