Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 tbsp (6g) pumpkin pie spice
- 0.5 cup (115g) unsalted butter, melted and slightly cooled
- 0.75 cup (150g) granulated sugar
- 1 large egg (approx. 50g)
- 1 tsp (5ml) vanilla extract
- 0.75 cup (180g) pumpkin puree
- 0.25 cup (60ml) milk
- 3 tbsp (35g) granulated sugar
- 1 tbsp (6g) ground cinnamon
- 2 tbsp (30g) melted butter
Instructions:
- Preheat oven to 350°F (175°C) and line a 24-cup mini muffin tin with paper liners or grease with cooking spray.
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and pumpkin pie spice until no clumps remain.
- In a large bowl, whisk the melted butter and 150g granulated sugar until combined.
- Beat in the egg, vanilla extract, pumpkin puree, and milk, whisking until the batter is smooth.
- Using a rubber spatula, gently fold the dry ingredients into the wet ingredients until just combined; do not over-mix.
- Spoon the batter into the mini muffin cups, filling each approximately 2/3 full.
- Bake for 12–14 minutes, or until a toothpick inserted into the center comes out clean.
- While muffins bake, mix 35g granulated sugar and ground cinnamon in a small bowl.
- While muffins are still slightly warm, brush the tops lightly with melted butter.
- Immediately dip the tops of the muffins into the cinnamon sugar mixture or sprinkle it generously over the buttered tops.
