Ingredients:
- 3 cups fresh peaches, peeled and diced
- 1 tbsp lemon juice
- 2 tbsp honey
- 2 cups heavy whipping cream, cold
- 1/2 cup plain Greek yogurt, full fat
- 1 tsp vanilla extract
- 1/4 cup powdered sugar
Instructions:
- Place diced peaches, lemon juice, and honey into a blender. Pulse until the mixture is a smooth, thick puree and set aside to cool completely.
- Pour the cold heavy whipping cream and powdered sugar into a chilled bowl. Beat on medium-high speed until stiff peaks form.
- Gently stir in the Greek yogurt and vanilla extract until just combined.
- Slowly pour the peach puree into the whipped cream base. Using a spatula, gently fold the puree into the cream using a figure-eight motion until a marbled effect or uniform pale orange color is achieved.
- Transfer the mixture into a metal loaf pan and smooth the top. Cover with plastic wrap touching the surface and freeze for at least 6 hours.
