Ingredients:

  • 3 cups fresh peaches, peeled and diced
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • 2 cups heavy whipping cream, cold
  • 1/2 cup plain Greek yogurt, full fat
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar

Instructions:

  1. Place diced peaches, lemon juice, and honey into a blender. Pulse until the mixture is a smooth, thick puree and set aside to cool completely.
  2. Pour the cold heavy whipping cream and powdered sugar into a chilled bowl. Beat on medium-high speed until stiff peaks form.
  3. Gently stir in the Greek yogurt and vanilla extract until just combined.
  4. Slowly pour the peach puree into the whipped cream base. Using a spatula, gently fold the puree into the cream using a figure-eight motion until a marbled effect or uniform pale orange color is achieved.
  5. Transfer the mixture into a metal loaf pan and smooth the top. Cover with plastic wrap touching the surface and freeze for at least 6 hours.
