Ingredients:

  • 8 large eggs
  • 1/4 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp melted unsalted butter
  • 6 English muffins, split in half
  • 6 slices sharp cheddar cheese
  • 6 slices precooked center-cut bacon or sausage
  • 2 tbsp unsalted butter, softened

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch pan with melted butter and line it with parchment paper.
  2. Whisk eggs, milk, salt, and pepper in a bowl until the mixture is uniform and no streaks of white remain.
  3. Pour the mixture into the pan and bake for 12–15 minutes, or until the center is set and the edges are just beginning to pull away from the sides.
  4. Allow the eggs to cool for 5 minutes, then use a knife to slice the slab into 6 equal rectangles.
  5. Spread softened butter on the cut sides of the English muffins and toast them in a skillet over medium heat or in a toaster until crisp.
  6. Briefly warm the precooked bacon or sausage in a pan until sizzling and fragrant.
  7. Assemble the sandwiches by layering the egg square, cheese slice, and meat on the muffin bottom, then topping with the muffin top.
  8. Wrap each sandwich tightly in aluminum foil or freezer-safe bags.
