Ingredients:
- 8 large eggs
- 1/4 cup whole milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp melted unsalted butter
- 6 English muffins, split in half
- 6 slices sharp cheddar cheese
- 6 slices precooked center-cut bacon or sausage
- 2 tbsp unsalted butter, softened
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch pan with melted butter and line it with parchment paper.
- Whisk eggs, milk, salt, and pepper in a bowl until the mixture is uniform and no streaks of white remain.
- Pour the mixture into the pan and bake for 12–15 minutes, or until the center is set and the edges are just beginning to pull away from the sides.
- Allow the eggs to cool for 5 minutes, then use a knife to slice the slab into 6 equal rectangles.
- Spread softened butter on the cut sides of the English muffins and toast them in a skillet over medium heat or in a toaster until crisp.
- Briefly warm the precooked bacon or sausage in a pan until sizzling and fragrant.
- Assemble the sandwiches by layering the egg square, cheese slice, and meat on the muffin bottom, then topping with the muffin top.
- Wrap each sandwich tightly in aluminum foil or freezer-safe bags.
