Ingredients:
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 tbsp water
- 3 lb boneless, skinless chicken breasts
Instructions:
- Pound the thickest part of each chicken breast with a mallet until they are an even thickness of about 3/4 inch.
- In a bowl, whisk together olive oil, lemon juice, garlic powder, dried oregano, sea salt, black pepper, and water.
- Toss the chicken in the marinade, ensuring every inch is coated, and let it sit for 30 minutes at room temperature.
- Preheat your grill to medium-high (375-450°F / 190-230°C) and lightly oil the grates to prevent sticking.
- Place the chicken breasts on the grill and sear for 6–8 minutes per side until a mahogany-colored crust forms.
- Remove the chicken from the grill once the internal temperature reaches 160°F (71°C).
- Transfer to a cutting board and let the meat rest for 5–8 minutes to allow the internal temperature to reach 165°F (74°C).
