Ingredients:

  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp water
  • 3 lb boneless, skinless chicken breasts

Instructions:

  1. Pound the thickest part of each chicken breast with a mallet until they are an even thickness of about 3/4 inch.
  2. In a bowl, whisk together olive oil, lemon juice, garlic powder, dried oregano, sea salt, black pepper, and water.
  3. Toss the chicken in the marinade, ensuring every inch is coated, and let it sit for 30 minutes at room temperature.
  4. Preheat your grill to medium-high (375-450°F / 190-230°C) and lightly oil the grates to prevent sticking.
  5. Place the chicken breasts on the grill and sear for 6–8 minutes per side until a mahogany-colored crust forms.
  6. Remove the chicken from the grill once the internal temperature reaches 160°F (71°C).
  7. Transfer to a cutting board and let the meat rest for 5–8 minutes to allow the internal temperature to reach 165°F (74°C).
