Ingredients:

  • 2 lbs sweet potatoes, peeled and diced into 1-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp maple syrup

Instructions:

  1. Preheat your oven to 400°F (200°C). Note: Letting the oven fully reach temp ensures the sizzle starts immediately.
  2. Peel the sweet potatoes and dice them into uniform 1 inch cubes.
  3. In a large mixing bowl, combine the diced potatoes, oil, salt, black pepper, garlic powder, smoked paprika, and maple syrup.
  4. Toss vigorously until every cube is evenly coated in the seasoning blend.
  5. Spread the potatoes in a single layer on a parchment lined or silicone mat-covered baking sheet. Note: Leave space between cubes to prevent steaming.
  6. Roast for 15 minutes until the bottoms are starting to brown.
  7. Flip the potatoes with a spatula to ensure even coloring.
  8. Roast for another 10–15 minutes until edges are mahogany colored and centers are tender.
