Ingredients:

  • 4 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 3/4 cup whole milk

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, toss the sliced peaches with the sugar, cornstarch, cinnamon, and lemon juice. Let the mixture sit for 10 minutes to macerate.
  3. Pour the melted butter directly into the bottom of a 9x9 inch baking dish, swirling to coat the base completely.
  4. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  5. Stir in the milk until just combined, leaving a few small lumps for a tender crumb.
  6. Pour the batter directly over the melted butter without stirring.
  7. Spoon the peach mixture evenly over the top of the batter without stirring.
  8. Bake for 40-45 minutes until the crust is deep gold and juices are bubbling.
