Ingredients:

  • 1 medium head (approx. 2 lbs / 900g) Green Cabbage
  • 1 large (approx. 8 oz / 225g) Yellow Onion
  • 3 tbsp (42g) Unsalted Butter
  • 2 cups (480ml) Water
  • 1 tsp (6g) Kosher Salt
  • ½ tsp (1g) Cracked Black Pepper

Instructions:

  1. Remove the outer leaves of the cabbage and the core. Slice the cabbage into ½ inch (1.3cm) strips.
  2. Dice the onion into medium pieces (roughly ¼ inch / 0.6cm).
  3. Add the water, butter, and salt to your pot and bring to a boil.
  4. Stir in the onions and cabbage.
  5. Reduce heat to medium-low, cover with a tight-fitting lid, and simmer for 15–20 minutes until the cabbage becomes translucent and velvety.
  6. Remove the lid and increase the heat slightly for 2–3 minutes to evaporate excess liquid, concentrating the flavors.
  7. Stir in the cracked black pepper and toss gently until the cabbage is glazed in the remaining butter.
