Ingredients:
- 1 medium head (approx. 2 lbs / 900g) Green Cabbage
- 1 large (approx. 8 oz / 225g) Yellow Onion
- 3 tbsp (42g) Unsalted Butter
- 2 cups (480ml) Water
- 1 tsp (6g) Kosher Salt
- ½ tsp (1g) Cracked Black Pepper
Instructions:
- Remove the outer leaves of the cabbage and the core. Slice the cabbage into ½ inch (1.3cm) strips.
- Dice the onion into medium pieces (roughly ¼ inch / 0.6cm).
- Add the water, butter, and salt to your pot and bring to a boil.
- Stir in the onions and cabbage.
- Reduce heat to medium-low, cover with a tight-fitting lid, and simmer for 15–20 minutes until the cabbage becomes translucent and velvety.
- Remove the lid and increase the heat slightly for 2–3 minutes to evaporate excess liquid, concentrating the flavors.
- Stir in the cracked black pepper and toss gently until the cabbage is glazed in the remaining butter.
