Ingredients:
- ½ cup (115g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ½ cup (100g) packed brown sugar
- 1 large (approx. 115g) overripe banana, mashed
- 1 tsp (5ml) vanilla extract
- 1 large (50g) egg, room temperature
- 2 cups (250g) all-purpose flour
- ⅓ cup (40g) instant vanilla pudding mix (dry powder)
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- ¾ cup (130g) white chocolate chips
- ½ cup (60g) crushed Nilla Wafers
Instructions:
- Beat the softened butter with granulated sugar and brown sugar using an electric mixer until the mixture is pale and fluffy.
- Stir in the mashed banana and vanilla extract, then beat in the egg until the batter is smooth and emulsified.
- Sift in the all-purpose flour, dry vanilla pudding mix, baking soda, and salt. Mix on low speed just until the flour streaks disappear.
- Gently fold in the white chocolate chips and crushed Nilla Wafers using a spatula.
- Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper or silicone mats.
- Bake at 350°F (175°C) for 9–11 minutes until edges are barely golden but centers remain soft.
- Remove from oven and allow cookies to firm up on the hot pan before transferring to a wire cooling rack.
