Ingredients
For cookies:
– 3 cups quick-cooking oats
– 1 stick REAL butter (1/2 cup)
– 2 cups sugar
– 1/2 cup milk
– 1 cup peanut butter
– 2 teaspoons vanilla
For cocoa drizzle:
– 1 1/2 cups powdered sugar
– 1/4 cup cocoa powder
– 1-2 tablespoons milk
Instructions
1. Line a work surface with parchment paper. Set aside the quick-cooking oats in a large mixing bowl.
2. Melt butter in a saucepan over medium heat. Stir in sugar and milk, then bring to a boil over medium heat, stirring frequently. Once bubbling, boil for 1 full minute and remove from heat immediately.
3. Add peanut butter and vanilla to the saucepan, stirring until the peanut butter melts. Pour this mixture over the oats in the mixing bowl and gently stir until well combined.
4. Using a cookie scoop or two tablespoons, scoop portions of dough onto the parchment paper.
5. Prepare the cocoa drizzle by mixing powdered sugar, cocoa powder, and 1-2 tablespoons of milk until smooth. Add the drizzle to a zip-top bag, snip a tiny hole at the corner, and drizzle over the cookies.
6. Allow cookies to cool and set completely before storing in an airtight container.
