Ingredients
– 1 can of kidney beans
– 1 onion, chopped
– 2 carrots, sliced
– 2 celery stalks, diced
– 3 cloves of garlic, minced
– 1 can of diced tomatoes
– 4 cups of vegetable broth
– 1 tsp of dried thyme
– Salt and pepper to taste
Instructions
1. In a large pot, sauté the onion, carrots, celery, and garlic until softened.
2. Add the diced tomatoes, kidney beans, vegetable broth, thyme, salt, and pepper.
3. Bring the soup to a boil, then reduce heat and let it simmer for about 20 minutes.
