Country Apple Fritter Bread

Ingredients

For the bread:


– 1/2 cup unsalted butter, softened
– 2/3 cup granulated sugar
– 2 large eggs
– 1 1/2 teaspoons vanilla extract
– 1 1/2 cups all-purpose flour
– 1 3/4 teaspoons baking powder
– 1/2 cup milk

For the apple mixture:


– 2 apples, peeled and chopped (Granny Smith or Honeycrisp work well)
– 2 tablespoons granulated sugar
– 1 teaspoon cinnamon

For the cinnamon-sugar swirl:


– 1/3 cup brown sugar
– 1 teaspoon cinnamon

For the glaze:


– 1/2 cup powdered sugar
– 1-2 tablespoons milk

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
Prepare the apple mixture: In a small bowl, mix the chopped apples with 2 tablespoons of sugar and 1 teaspoon of cinnamon. Set aside.
Prepare the cinnamon-sugar swirl: In another small bowl, combine the brown sugar and 1 teaspoon of cinnamon. Set aside.
Make the batter: In a large bowl, cream together the softened butter and 2/3 cup of sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until well combined.
Layer the bread: Pour half of the batter into the prepared loaf pan. Top with half of the apple mixture and sprinkle with half of the cinnamon-sugar swirl. Add the remaining batter on top, followed by the rest of the apples and the remaining cinnamon-sugar mixture.
Bake: Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack.
Make the glaze: In a small bowl, whisk together the powdered sugar and 1-2 tablespoons of milk until smooth. Drizzle the glaze over the cooled bread.
