Ingredients
– 1 pound of ground beef
– 5 medium potatoes, peeled and diced
– 1 small onion, sliced
– 2 cloves garlic, minced
– 3 quarts beef stock
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1/4 cup butter
– Salt and pepper, to taste
– Fresh chives, chopped (for garnish)
Directions
1. In a large saucepan, melt the butter over medium heat. Add the ground beef and crumble it as it browns.
2. Add the diced onion and garlic, sautéing until the onion becomes soft and translucent.
3. Pour in the beef stock and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and simmer, covered, for 20-25 minutes, or until the potatoes are tender.
4. Stir in the shredded cheddar cheese and heavy cream until the cheese melts and the soup becomes creamy.
5. Season with salt and pepper to taste, and garnish with fresh chives.
